Christmas Baking: Gingersnaps

Christmas baking is dangerously addicting, and technically these gingersnap cookies don’t have to be, but really, they do. Everyone finds these cookies very addicting and comforting all at the same time.

I love ginger in cooking, and I always enjoy a good ginger tea. And of course, during cold and flu season, I love to take ginger juice shots to ward off sickness. Naturally, gingersnap cookies are pretty high up on my list. Plus, I can’t resist that perfect crunch gingersnap cookies have. Just me?

Ginger is a wickedly delicious spice, and paired with the sweetness of granulated sugar is just *chefs kiss*. The gingersnap is right up there with the shortbread cookies I make all month long, every December.

It’s all about balance. 😉

Gingersnap Recipe

Here’s what you’ll need:

  • 3/4 cup butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1/2 cup molasses
  • 2-1/2 cups all-purpose flour
  • 2 tsp. baking soda
  • 2 tsp. ginger
  • 1 tsp. cinnamon
  • 1/2 tsp salt

*have some granulated sugar for rolling to the side

Preheat your oven to 350 degrees. In a separate bowl, add in your flour, baking soda, ginger, cinnamon and salt together.

Cream the butter and granulated sugar in your mixing bowl, and then beat in the egg. Add the molasses and mix them together. Slowly add the dry ingredients to the wet ingredients and mix well. Shape into 1″ balls, and roll in the separate sugar and place on a baking sheet.

I do tend to flatten mine just a smidge because I prefer a thinner gingersnap. It puts the snap in the ginger 😉

Bake for approximately 10-12 minutes and let cool on a wire rack. Store these gingersnap cookies in an airtight container to keep them tasting fresh, not that I think they’ll last that long.

Conclusion

I can guarantee you that these gingernsap cookies won’t last long enough for you to have to worry about going stale. They’ll go stale quicker if someone forgets to close the container properly.

These also make a great gift to drop off for your neighbours or friends over the holidays as thank you or thinking of you types of gifts.
