Thai Coconut Orzo
This Thai Coconut Orzo is an easy Thai dish for dinner, that doesn’t require a lot of work.
No one needs or wants to be slaving over dinner after a long day at work, or running around with kids or all of the above. Weeknights are all about keeping it simple, especially in this household.
I love combining Thai and prawns; there’s just something about this combination that I love. To me, Thai food has a very flavourful and delicate palate and works well with so much seafood.
Plus, with all this staying at home, you can make this Thai coconut orzo and pretend you are sitting in Thailand, shoving your face full of delicious food. Hot tip – pair with a cocktail, and you’re set for your mental escape to Thailand.

Here’s your list of ingredients to make the Thai Coconut Orzo.
For the coconut lime seasoning, we used 2tbsp of shredded coconut and the zest of one lime.
- 21 ounces orzo, cooked
- 12 ounces diced carrots
- 6 ounces fresh spinach
- 12 ounces diced celery
- 24 ounces coconut milk
- 12 ounces diced red peppers
- 1.5 TBSP Red Thai Curry Paste
- 1 tsp salt
- 2 TBSP coconut lime seasoning
- 25 prawns
Directions
Boil the orzo according to package instructions, leaving slightly undercooked (al dente) – approximately 8 minutes. While the orzo is cooking, chop up your veggies. Drain orzo and set aside to cool.
Preheat your oven to 400 degrees Fahrenheit.
Sautee your carrots, celery, onion and red peppers in oil (we use EVOO) with half of your coconut lime seasoning in your pan. We use a Staub cast iron skillet. Add the red Thai curry paste, salt and coconut milk and mix well. Add your cooled orzo to toss and simmer in coconut mixture for 2-3 minutes.
Brush the prawns with oil and sprinkle with the remainder of the coconut lime seasoning. Pop the prawns into the oven and bake for 3 minutes on one side. Flip to the other side and repeat.
Mix prawns with the orzo mixture, along with the spinach, and serve up in bowls, or family-style.
