Chocolate Chip Cookies

Chocolate chip cookies are da bomb! I mean at Christmas time we tend to stick to shortbread (how many cookies can 2 people eat), but the rest of the year, these cookies are in our house. Probably should’ve been part of my marriage vows to Jason, but whatever.

While I come from the generation of lick the spoon and/or beaters, I get that is a total faux-pas these days. Pretty certain it gave me an iron stomach, and crazy to look back on what our parents let us do as kids. Those were the good old days! Stay safe though, and don’t eat the chocolate chip cookie dough. 

Married to a cookie monster

I’d like to say that I didn’t know until I lived with Jason that he was as obsessed with cookies as he is, but he made that evidently clear from the beginning. Every time we had a big family gathering or were over at his grandparent’s house, Seda would bust out the cookies and life was good. Jason and his grandfather are cookie lovers, so it’s definitely a family thing.

I love me a good cookie don’t get me wrong, and especially a chocolate chip cookie or a shortbread cookie, but my husband takes it to a new level. Lately, it seems like I’m whipping up a batch of these chocolate chip cookies every week, to keep the cookie monster in each of us happily satisfied.

If you put oatmeal in a cookie, I will spit it out. I love oatmeal, and I love cookies, but not together.

To make this recipe you can use either your stand-up mixer or hand mixer – both work just fine! I have the Kitchen-Aid Professional stand-up mixer, but if you’re looking for a less expensive option, you can snag the Kitchen-Aid Artisan Stand-Up Mixer off of Amazon. Kitchen-Aid also has a hand mixer that I don’t have, but everyone else around me does have and loves!

I knew when he bought me my stand-up mixer, it was a hint. A hint to make more delicious cookies. Twist my rubber arm!

Chocolate Chip Cookies – Ingredients

  • 1 cup of butter (2 sticks or one brick typically). I let this sit out for about 30 minutes prior. 
  • 1 cup of brown sugar. Do not use light brown sugar …good old regular brown sugar is the key to a delectable chocolate chip cookie. 
  • 2 eggs
  • 2 tsp vanilla
  • 2-1/4 cups white flour
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1-1/2 cups chocolate chips. We tend to get the bag of mini semi-sweet chocolate chips and put in the whole bag which equates to the right amount. 
  • OPTIONAL: 1 cup chopped walnuts

Directions

Line your cookie sheets with parchment paper and preheat your oven to 325 degrees (convection).

Cream the butter and sugar together for about a minute. As that mixes in my stand-up mixer, I get my dry ingredients together.

Sift the flour, and add the salt and baking soda. Mix together with a fork and set aside.

Add the eggs one at a time and beat thoroughly, along with the vanilla.

Slowly add in the mixed dry ingredients 1/4 cup at a time. Once the flour mixture is mixed into the wet ingredients, add your chocolate chips. If you’re adding in walnuts, add them now.

 

I eyeball my rolled cookie dough and flatten slightly once on the cookie sheet. If I’m making slightly larger cookies, I get about 18. If I stick to tablespoon ish size, I get about 26 cookies. 

Bake at 325 degrees Fahrenheit for approximately 10-12 minutes. Let cool on a rack and then store in an airtight container.

Pairs really well with a hot chocolate – just sayin’!
