Taking advantage of leftovers, make for really easy dinner ideas, especially when you do not have a lot of time to prep dinner. One of our favourite dinners to make is a cobb salad with our leftover Down Lo Chicken Shack chicken tenders. When we order, we get the large tenders, one fries, and some macaroni salad and we always have leftover chicken tenders.

The down lo chicken shack is Nashville Hot Fried Chicken with a variety of spice levels available, based in East Van on Commercial near Venables. Anyone that knows me, knows that I love a good hot & spicy chicken sandwich or tenders. Really, just spice in general – I am here for it all the spice all day, err’day. On more than one occasion, I have hit the highest spice level – side of milk. I have yet to make it down to Nashville, TN, but it will be a tasty vacation! 

In a non-COVID world, you can go and sit in to eat, but the restaurant is small. There are picnic tables outside and expanded in the COVID world, but they’re also set up really well for take-out, which is our preference. Whether we bring home and watch Netflix or if we hang out in the park and soak up the sunshine, we can always count on having leftovers without starving ourselves, every time. 

Sunday’s Suck – Leftovers Make It Easy

Sundays are full of grocery shopping, meal prepping, run days, bubble baths, and a lot of football if it’s football season. Sundays that involve leftover down lo chicken makes for a relaxed dinner while getting lunches prepped for the workweek. What’s easier than throwing a salad together? Having the protein portion already cooked and seasoned! 

This chicken is to die for. Trust me, y’all …from no spice to lots of spice, and everything in-between. 

We recently went out for a late afternoon walk as the rain started to taper, and then wound up enjoying happy hour on a local restaurant patio and we weren’t home until after 6 pm. Jason wanted to get our income taxes done so I prepped the eggs, lettuce and veggies.

Dinner was ready in less than 20 minutes, as Jason had made the bacon when he was getting lunch for the workweek all prepped and cooked. 

Chicken Cobb Salad With Leftover Chicken

  • 3-4 ounces chicken per person
  • 1 egg per person
  • Stilton cheese
  • Spinach (fresh)
  • Mixed greens 
  • Cherry tomatoes
  • Cucumber
  • Chopped bacon
  • Red onion 
  • Avocado (1/2 per person)

Wash your lettuce and spinach, while you boil the water for the eggs, if not prepped in advance that is. Once the water is boiled, pop the eggs into the water for 7-8 minutes and chop the tomatoes, red onion, cucumber and bacon. Drain the eggs and rinse with cold water. 

Mix the spinach and the mixed greens lightly olive oil and balsamic and put in your bowl or plate. Add your tomatoes, cucumbers, red onion, stilton or other blue cheese of your choosing, the egg, bacon and leftover chicken. If you prefer you can use a ranch or other creamy style of dressing, but we prefer to keep it lighter and get the cream from the Stilton cheese.

This also makes for a delicious make-ahead lunch as well; workweek lunches shouldn’t be made more difficult than they need to be. 

What’s your favourite part of a cobb salad? Mine is the quality stilton cheese, but of course the leftover chicken from the Down Lo Chicken Shack! If you’re not local to Vancouver, make sure to hit this spot up whenever you can travel here again. Definitely worth the lineup; trust me.
